Eggs.

I eat about 70% vegan these days. I often toy with the idea of going full vegan, I don’t eat meat and I don’t eat dairy anyway.. but then…

EGGS! (here’s one I devoured earlier)

They are just so tasty, healthy, and good for your skin. BUT always go free-range, and organic if possible. Cage eggs are bad news.

They are a complete and inexpensive source of protein (yes, even organic eggs if you consider how much nutrition you’re getting for the price). Protein is a source of energy, but its main role in the body is growth and repair. It helps in the formation of muscles, hair, nails, skin and organs, such as the heart, kidneys, and liver.

Make sure you eat the whole egg- the yolk has all the good stuff (over 90% of the calcium and Iron). One whole egg has over 11 essential vitamins and minerals including selenium, vitamins A, D, E, K, B2, B6, and B12,  and minerals such as zinc, iron and copper.

Vitamin E in particular is an amazing antioxidant that protects and repairs your skin. Antioxidants are agents that neutralize the oxidant effect of free radicals, which are molecules that damage collagen and cause skin dryness, fine lines and wrinkles. Vitamin E is one of the most powerful antioxidants out there, but your body can’t produce it. So, you have to make sure you’re getting enough of this valuable nutrient in your diet.

With eggs I’m a bit lazy and tend to just boil em and eat em straight from the shell, but eggs and avocado (also full of vitamin E) are probably the most delicious thing ever and packed with so much goodness. Check out Kayla’s recipe here.
